Everyone likes home cooking but you may need to have a hook for your establishment. If you are thinking or locating your business along a main route, if you have a large parking lot, you might get a lot of truck drivers. And they love breakfast food. You can serve breakfast food all day long. And you can make lots of money.

You can get lots of business for the locals too, because people love breakfast anytime of the day. Certainly later on you may want to add other items to your menu, but to start out, you need something that sets you apart from the others. And you can do a better job when you concentrate on one menu. It will be easier to keep the food ready to prepare and your shopping list for the business will be much easier to keep up with.
